Can’t believe it’s a new week already! I meant to post yesterday whilst Theo was napping but I ended up having a cheeky nap myself. There seems to be no time and I have an out of control To-Do list. Anyway, I’ll save that for another time.
I’ve been eating lots of great food and feel like I’m thriving since I’ve returned to eating vegan. My IBS is still a bit iffy but I’ve made a few adjustments to my diet which have helped. And I finally feel comfortable discussing my food choices and ethics with others, progress!
Over the weekend we had a few BBQs as the weather was so nice. Tom cooked burgers and sausages whilst I made accompaniments and something for me.
This was an adaptation of Gena’s dish. I just switched out the pepper and black beans for cannelini beans and roasted asparagus (yay for asparagus season). It was amazing. I’ve even made another batch of the dressing to keep in the fridge to have on my salads this week.
I had mine with veggie sausages.
Another BBQ night i had this salad and jacket potato topped with hummus and dairy-free spread.
On the weekends I’ve started making smoothies for breakfast. I don’t in the week because we can’t afford to have them that regularly and Theo hates the noise of the blender. So Saturday Theo and I shared a banana, berry, nectartine, mixed greens and soy milk one.
Theo wanted to eat it with a spoon instead of drinking it; messy! I need to find a cup and straw he could use instead.
On Sunday afternoon we had a babies day out with all our antenatal friends. It was a picnic/afternoon tea affair so I made these rock cakes/oat cookies.
They were super easy and went down a treat.
And that was the bulk of our weekend. We also did some reorganising of the house so our dining room has now become Theo’s playroom for the most part.
I’m off now to chillax. Plus I’m blogging from my tablet, which is a nightmare, because I’m having problems using tom’s PC. Hopefully we’ll get a new laptop soon.
