Today has been a funny day. This morning I had an exam so my stomach was in knots and didn’t feel right (and still doesn’t feel right). Then, on returning from my exam, I had an essay to finish off for Monday. Amongst all this I desperately wanted to relax and ponder on what to cook for dinner but time did not permit this. However, I did manage to come up with some quick and easy food to munch on in celebration of Vegan MoFo. Here it is:
50g raw cashews, soaked for 2hrs
4 large, oil-packed sun-dried tomatoes
3 tbsps water (approx)
Juice of 1/2 lime
Blend all the ingredients until you reach your desired consistency (I have a rubbish mini-food processor so it’s not very well blended!).
